Ingredients
226gm of Softened Butter
250gms Granulated Sugar
2 Egg Yolks
1 Tsp Vanilla
75gm Sourdough Discard
300gm All-Purpose Flour
10gm Baking Powder

For Sugar Cookies: roll cookie balls in course sugar
For Snickerdoodle Cookies: roll cookie balls in a mixture of granulated sugar, brown sugar and cinnamon

Instructions:
In a standing mixer, add butter and sugar and mix on low/medium speed until well combined and no lumps. Next, a one egg yolk at a time, mixing until well incorporated. Next, add vanilla and blend until well combined. Next, add sourdough discard and mix until well combined.
In a large mixing bowl whisk together your flour and baking powder, then slowly add to wet ingredients keeping mixer on low to medium speed.
Refrigerate dough for 30mins to 1 hour.
Pre-heat oven to 350 degrees. Using an ice cream scoop, scoop out dough, roll between hands to make a ball, roll cookie dough ball in your sugar combination or choice, place on baking sheet. Bake at 350 degrees for 12-14 mins, mine were perfect at 13 mins (every oven is different). When removing from oven, let rest on cookie sheet for 1-2 mins (cookies will be very soft when they first come out of the oven). After 1-2 mins of resting on the cookie sheet, move to cooling rack. Enjoy!
