Ingredients:
500gm Unbleached All-Purpose Flour
10gm Salt
40gm Honey
255gm Warm Filtered Water or Spring water
100gm Active Sourdough Starter
—————————————-—
1 Tbsp Granulated Sugar set aside to add to boiling water
1 egg and splash of water for egg wash (whisk together)
Directions:
In a large mixing bowl combine flour, salt, honey, water and active sourdough starter. Combine until shaggy dough forms. Turn dough out onto lightly floured surface and knead for 5-7 mins. You know your dough is ready when you gently press on it and it bounces back.
Place dough back in bowl, cover with kitchen towel and let rest for 8-12 hours. After 8-12 hours place dough in refrigerator to chill for 1 hour.
After dough has chilled, divide dough into 8 equal sections. Roll into balls and let rest on counter for 20 mins. While dough is resting, bring a pot of water to boil. Once water is boiling add 1 Tbsp granulated sugar to the boiling water and dissolve.
Boil each bagel for approximately 90 seconds, flipping about every 30 seconds. When the bagels float they are done boiling and you can place them back on baking sheet.
Prepare an egg wash and brush the top of each bagel with the egg wash. Next, add your toppings of choice (I use everything bagel seasoning).
Bake at 425 degrees for 20-25 mins until golden brown, let cool on rack and enjoy! Check out my homemade Cream Cheese recipe, cheers!

Ingredients
25gm Cocoa Powder
50gm of your favorite Coffee (I use Nespresso pods)
110gm Active Starter
170gm Warm Water
1/2 Tbsp Vanilla Extract
25gm Brown Sugar
250gm Bread Flour
10gm Salt
50gm Chocolate Chips
Instructions
In large mixing bowl combine cocoa powder and coffee, mix until well combined. Next, add active sourdough starter, water and vanilla extract, mix until well combined. Next, add brown sugar and mix until dissolved. Next, add bread flour and salt, mix until well you have a shaggy dough. This dough will be more wet than normal sourdough, so don’t be alarmed, this is normal. Cover dough with damp kitchen towel and let rest in warm place for 1 hour.
After 1 hour of rest, start your first stretch and fold. Let rest 30 mins. Before your 2nd stretch and fold add chocolate chips to bowl. Begin 2nd stretch and fold making sure to incorporate chocolate chips. Let rest 30 mins. Perform next 2 sets of stretch and folds 30 mins apart.
After your 4th stretch and fold cover with damp kitchen towel and let bulk rise for 4-5 hours.
After bulk rise complete, laminate and shape your dough. Place upside down into seasoned banneton. Cover with shower cap or plastic bag. Place in refrigerator to cold proof overnight.
The next day, preheat dutch oven to 450 degrees. Once Dutch oven is preheated, remove loaf from refrigerator flour, score and place in Dutch oven. Bake at 450 degrees with lid on for 25 mins. After 25 mins remove Dutch oven lid, reduce oven temp to 425 degrees and continue to bake for additional 12 mins.
Once baking complete, remove from oven, cool on rack completely and enjoy, Cheers!

The perfect breakfast bread to pair with your morning cup of coffee!
Ingredients
2 Tbsp Melted Butter
2 Tbsp Sugar
1 cup Warm Milk (110 degrees)
1.5 cups active sourdough starter
4 cups all-purpose Unbleached flour
Egg Wash:
1 large egg
splash of water
Instructions:
Warm milk to 110 degrees then add to large mixing bowl. Next add melted butter, sugar, and sourdough starter. Mix until well combined. Next, add flour and mix well until shaggy dough forms. Turn dough out onto lightly floured surface, knead for 3-5 minutes until dough forms smooth ball. Place dough in lightly oiled bowl. Cover with plastic wrap and let rest for 2 hours.
Next, turn dough back out onto lightly floured surface, punch dough down, knead for 1-2 minutes. Separate dough into 4 equal sections with knife or bench scraper. Separate those 4 sections into 3 equal sections. You should now have 12 equal portions to shape into 12 pretzels.
Roll each piece out into a 26-32 inch long strand and shape into 12 individual pretzels (See Tik Tok Video). Place on a baking sheet and set aside.
Preheat oven to 450 degrees. Next, fill a stock pot with water and bring to a boil. Once water comes to a boil add 1 Tbsp baking soda to water and stir for a few seconds until dissolved. Next, add pretzels to boiling water 2-4 at a time (depending on how large your pot is, I do 2 at a time). The pretzels will initially sink to the bottom of pot, once they float, remove them from the water and place back on baking sheet, this only takes less than a minute for each pretzel. Repeat this process for all pretzels (see video).
Once all pretzels have been boiled, brush with egg wash, season with your favorite toppings (I use cinnamon/sugar and everything Bagel seasoning).
Bake pretzels in 450 degree oven for 14-15 mins. Cool on rack, enjoy!
Tip: store in air tight container, reheat in microwave for 15-20 seconds, pair with my homemade cream cheese or frosting, enjoy! Cheers!

These delicious soft pretzels are the newest weekly restock item in my kitchen! Pair with my homemade cream cheese or frosting.
Ingredients
7 cups whole milk
1 cup heavy cream
1/4 cup lemon juice
1/2 to 1 tsp salt
Instructions
Add whole milk and heavy cream to a large pop. Bring milk to a boil. Once milk has reached boiling add lemon juice, quickly stir then immediately remove from heat. Let milk curdle (approximately 3-5 minutes). Once curdle complete, strain through cheese cloth. Squeeze as much liquid from cheese as you can. Next, run cheese under cold water 4-5 times then again squeeze as much liquid from cheese as possible. Place cheese in blender or food processor. Add 1/2 to 1 tsp salt. Blend until smooth and creamy. Transfer cream cheese to container and place in refrigerator to set. Cream cheese will thicken while cooling. Cheers!

12 Roma Tomatoes
3 small Yellow Onions
2 cups Cilantro
1 Lime
1/2 ~ 1 tsp Salt
Instructions
Dice tomatoes and onions, add to medium mixing bowl. Next, chop up 2 cups fresh cilantro and add to bowl. Next, add the juice from 1 Lime to the bowl. Season with 0.5 to 1 tsp salt, mix well and enjoy. Cheers!
Ingredients:
1 pound pork sausage
4 Eggs
Salt
Pepper
1 cup shredded cheddar cheese
1 - 24 count King’s Hawaiian Rolls
Batter:
2 eggs
2/3 cups Vanilla Coffee Creamer
Splash of Vanilla
1/2 tsp cinnamon
Instructions:
Brown your pork sausage then set aside. Next, scramble 4 eggs (I like to add a splash of milk to my eggs), season with salt and pepper. Add 1 cup shredded cheese to eggs until melted. Next, add your sausage to your eggs and incorporate until well combined.
Next, prepare your King’s Hawaiian Rolls. Cut out a circular hole in each one, save your centers to top them once stuffed. Fill each roll with your sausage and eggs mixture. Flatten out the toppers and place back on center of rolls.
Next, in a separate bowl prepare to make your batter. Add eggs, vanilla coffee creamer, vanilla and cinnamon to the bowl and whisk until well combined.
Next, lightly grease your skillet over medium heat. Soak each roll in batter then toast in skillet until browned on each side. Once browned, move them to a baking sheet. Heat oven to 225 degrees. Once all rolls are browned and on the baking sheet place them into your oven for 10-15 minutes before serving so they are all warm at the same time to serve.
Once they are warm, take out of oven , dust with powdered sugar and serve with maple syrup for dipping. Cheers!

Ingredients:
1/2 cup Canola Oil
1/2 cup Granulated Sugar
1 Tbsp Lemon Zest
2 Tbsp Lemon Juice
1 tsp Vanilla Extract
2 Eggs
1/2 cup Almond Milk
1 1/2 cups All-Purpose Flour
1 tsp Baking Powder
1/8 tsp Salt
Glaze:
1/2 cups Powdered Sugar
1 Tbsp Lemon Juice
Instructions:
Pre-Heat oven to 350 degrees. In a standing mixer bowl add Canola Oil and Granulated Sugar. Mix on medium until well combined. Next, add in lemon zest, lemon juice, vanilla, eggs and almond milk. Mix until well combined.
In a separate mixing bowl add flour, baking powder and salt. Whisk together until well combined.
Next, turn your mixer back on with your wet ingredients. Slowly add your dry ingredients. Stop to scrape the edges of the bowl to ensure all ingredients get well mixed.
Next, fold blueberries gently into batter. Prep your loaf pan with cooking spray then pour your batter into loaf pan. Make sure your batter is set evenly before baking.
Bake in 350 degree oven for 40mins. A toothpick should go into the center and come out clean…that is how you know it is done!
Let cool on rack completely before adding glaze. Enjoy!

Ingredients:
250gms Sourdough Starter at Peak
725gms Warm Filtered or Spring Water
25gms Salt
1000gms Unbleached All-Purpose Flour
Instructions:
In a large mixing bowl, add Sourdough Starter and water. Combine using a bread whisk (or whatever whisk you have). You should see some of your starter floating, that’s good…it is a good indicator that your starter is ready to bake with. It is also ok to see some small chunks of starter still floating after mixing until bubbly…keep moving on to the next step.
Next, add salt and flour to your mixture. Now get ready to get those hands dirty. Using your hands work ingredients into a shaggy dough. Scrape the sides of the bowl with a bench scraper. Now cover dough bowl with a kitchen towel and let rest in a warm place for 1 hour.
After letting your dough rest for 1 hour you are now ready to begin your first stretch and fold. If you are unsure what this means refer to my Tik Tok video for demonstration (See link below). Repeat this process every 30 mins four times. After your 4th stretch and fold cover with a kitchen towel and let dough rest in warm place for 2 hours.
After letting your dough rest for 2 hours pour dough out onto clean surface. Do not pull on your dough, let gravity do its job and it will fall out on its own…be patient and resist pulling on your dough.
Next, using a bench scraper cut dough into 2 equal loafs…just eyeball it, no stress here!
Next you will laminate your dough, which is just a fancy word that means stretch it into a rectangle shape (Add inclusions at this point, see Tik Tok video), next do an envelope fold (see Tik Tok video) then roll up tightly without ripping dough. Now you will begin your push and pulls to shape the dough into a smooth ball. In a seasoned bread bowl flip dough into bowl leaving upside down. Repeat this process for your second loaf.
Let dough rest for 20mins then repeat the laminating and shaping process for each loaf, this is called the 2nd shaping. If you are doing a bulky inclusion skip the 2nd shaping process
Next, Place your dough in the refrigerator to cold proof for 2 hours.
About 20mins before your cold proofing is complete preheat your oven to 500 degrees with your Dutch oven inside.
After cold proofing is complete, flip your dough out onto parchment paper, score with with bread scoring knife (lame) and bake at 500 degrees with lid on for 35 minutes. Next, reduce the oven temperature to 425 degrees and bake for another 10 minutes with the lid off.
Viola! Perfect 8 hour sourdough bread hot and fresh out of the oven! Try my honey butter recipe for extra fun. Cheers!

2 cups Warm Water
1/4 cup Honey

1 Tbsp Melted Butter
1 1/2 tsp Salt
6 cups Bread Flour
Butter Spray
2 Tbsp Cold Butter Stick - for coating loafs after baking

1 Pint Heavy Whipping Cream
1 tsp Salt
2 Tbsp Honey
Instructions:
In Kitchen Aid mixing bowl (or similar standing mixer), add heavy whipping cream, salt and honey. Using whisk attachment, turn mixer on at speed setting 2, slowly increase to speed 6 (see Tik Tok video). Be sure to cover bowl with kitchen towel during mixing process to stop buttermilk from flying everywhere, lol! When butter is at “whipped butter” consistency you could choose to stop here if desired. The rest of us…keep going for traditional butter and buttermilk. this is a good time to use a spatula to scrap the edges of the bowl (see Tik Tok video). Resume at speed 6. Continue mixing until butter forms and is stuck to the whisk. Once full separation of butter and buttermilk has completed, form butter into a ball and squeeze out excess buttermilk. Run butter ball under cold water and continue to squeeze out as much excess buttermilk as possible. Place butter in container of choice, use the back of a spoon to smooth butter to fit container of choice. Butter may be left on counter at room temperature for use, or chill in refrigerator if preferred. I prefer mine chilled. Next, strain the buttermilk and place in mason jar with lid and keep chilled to use in our favorite buttermilk buiscuit recipe!

50gms Unbleached All-Purpose Flours
50gms Spring Water or Filtered Water
Mason Jar with Lid
Food Scale
Day 1 Instructions:
Place mason jar on food scale then press “Tare.” This will zero your scale with the jar included. Add 50 gms of Unbleached All-Purpose Flour to the jar. Next, add 50gms of warm Spring or Filtered Water to the jar. Mix until smooth with a plastic spatula or wooden spoon, do not use metal utensil to mix, it can cause the yeast to die. Mix until you have a think pancake like batter. Cover loosely with lid, do not make air tight. Air will need to escape as the starter begins to ferment. Set aside in warm area. You will begin feeding your starter on day 2. See separate recipe for feeding Sourdough Starter days 2-14.

Great, you made it to day 2 of establishing your own sourdough starter! For days 2-14 you are going to feed at a 1:1:1 ratio. So let’s GO!
Get that handy dandy kitchen scale ready. Place clean mason jar on scale then press “Tare.” Again, this will zero your scale to include the weight of the jar, your scale should read, “0.” Next, add 50gms of your sourdough starter from Day 1. Next, add 50gms of flour. Next, add 50gms of water. Mix until smooth and you have a think pancake like batter, you batter should stick to your spatula and not run off.
Continue this same process for days 2-14. You need to feed your sourdough starter every 24hrs. Make sure to leave your starter in a warm area, it will thrive in 75-82 degrees. Sourdough starters can take anywhere from 14-30days to become well established. Don’t give up, you got this!
Each day you will get to know your starter…they all of a mind of their own. You will get to know yours. Give your a starter a name…it’s what all the cool sourdough kids do! Observe your starter everyday. You should see bubbles forming. You may also notice a liquid that forms on top…this is NORMAL and it’s called Hooch! It is a good sign. Do not remove the Hooch, just mix it in. You will also notice an acetone like smell…also normal! Another sign of a healthy starter.
***until your starter is well established you will throw away your discard each day. Discard is what is left after you use the 50gms you need to feed each day. Later down the road you will be able to keep your discard in a separate jar in the refrigerator and use it for all kinds of sourdough discard recipes. But for now toss it, it is not safe to eat as their are bacteria that need to be developed out of it in the establish processing.***

Ingredients:
2 1/2 cups All-Purpose Flour
2 Tbsp Baking Powder
1/2 tsp Salt
1 1/4 cups Buttermilk
1/2 cup Cold Butter ~ Cubed
2 Tbsp Melted Butter to brush tops of biscuits before baking
Butter Spray
Instructions:
In a large mixing bowl add flour, baking powder and salt, whisk together until combined. Set aside.
Cube 1/2 cup chilled butter.
Incorporate chilled butter into dry ingredients until you have a crumbly batter (see Tik Tok video).
Make a well in dry ingredients. Pour in 1 1/4 cups buttermilk (see recipe for making your own buttermilk). Mix until well combined. Will create a shaggy dough.
Flour your surface. Shape dough into rectangle. Fold dough onto itself several times to create flaky biscuit layers (see Tik Tok video).
Flatten dough to 1 inch thickness. Use a biscuit cutter or small cup to cut out biscuits. Do not twist while cutting out biscuits, twisting will seal the edges and your biscuits will not rise appropriately as they bake.
Place biscuits in greased skillets (preferably cast iron, but use what you have). Brush tops of biscuits with melted butter before baking.
Bake in a 475 degree oven for 18 minutes. Cool on rack, enjoy!

220gms Bread Flour
5gms Salt
1/2 tsp Baking Powder

120gms Sourdough Starter Discard
5gms Vanilla Extract
1 Stick Cold Unsalted Butter - Cubed
100gms Granulated Sugar
100gms Brown Sugar
220gms Chocolate Chips
Instructions:
In large mixing bowl add bread flour, salt and baking powder. Mix dry ingredients then set aside.
In a separate mixing bowl add egg, sourdough starter discard and vanilla extract. Whisk until well combined.
Cube 1 stick cold butter and add to Kitchen Aid (or similar standing mixer) bowl. Add granulated sugar and brown sugar. Turn on mixer, mix until well combined.
Add chocolate chips to Kitchen Aid bowl with butter/sugar mixture. Mix until chips are incorporated.
Next, add dry ingredients to Kitchen Aid bowl, mix until well combined.
Next, add wet ingredients to Kitchen Aid bowl, mix until well combined.
Chill batter in refrigerator for a minimum of 1 hour…2 hours is best!
Bake in 375 degree oven for 13-15 minutes. The original recipe states 15 minutes but mine burned at that time. My were perfect at 13 minutes. Every oven is different.
Cool on rack, enjoy!
